In September 2022 I spent a wholesome week in the beautiful and wild island of Paros in Greece. On top of morning meditation, morning mandala vinyasa yoga, evening yin yoga, plenty of sunshine, blue sea, island breeze and inland excursions, the retreat offered three nutritious meals a day. I still have vivid memories of the colourful breakfast buffet that was ready for us after yoga practice. Both savoury and sweeter options were available. I remember a beautiful platter of greek tomatoes, crumbled feta, mountain greens and bread. Fresh seasonal fruit, homemade bircher muesli, homemade pistachio nut butter, homemade almond butter and, there it was - an inviting jar of homemade cacao and sea salt buckwheat granola. I was never a big granola fan as the big crunchy chunks always hurt my gums. This granola looked differently, it seemed it didn't have large hard clusters and I was personally intrigued as I never tried buckwheat like this.
Oh my... I fell in love with it and, every morning I had my fair share! Crunchy without hurting the inside of my mouth and with that nutty chocolaty taste that balances perfectly with yogurt and milk alike. The retreat chef didn't share the recipe but said it would be in her newly published cookbook. Of course I ordered it but, guess what? I didn't find the recipe on it.
Recently, the gorgeous flavours of this granola came back to my mind and I decided it was time to give it a go using my memory as a guide. I love this version which is very easy to prepare and will give you wholesome energy to start the day. I have now made a batch for the last three weekends and enjoy eating it with some greek yogurt and kefir, and sliced banana.
